Celebrate our amazing members with the Member Spotlight. Each month, we shine a light on the incredible individuals who make Barryroe Co-op so special. This month, we're thrilled to feature Mary O'Connell, a long-time member and passionate advocate for sustainable farming. Mary has been a member of the co-op for over 20 years and has played an instrumental role in promoting environmentally friendly practices in our community. Her dedication to sustainable agriculture is truly inspiring, and we're honored to have her as part of our co-op family.

Mary runs a small family farm where she grows a variety of organic vegetables and raises free-range chickens. She’s a firm believer in the importance of soil health and biodiversity, and she uses a range of techniques to promote these principles on her farm. These include crop rotation, composting, and the use of natural pest control methods. Mary’s commitment to sustainability extends beyond her farm. Upcoming Events

Mark your calendars with Barryroe Co-op’s upcoming events. We've got a jam-packed schedule of events coming up that you won't want to miss! First up is our annual Spring Planting Workshop on April 15th. This is a fantastic opportunity to learn about the latest techniques in organic gardening and get your hands dirty planting seedlings. Whether you're a seasoned gardener or a complete beginner, you'll find something to inspire you at this workshop. Our expert instructors will guide you through the process of planting seeds, nurturing seedlings, and preparing your garden for the growing season. You'll also learn about companion planting, soil health, and natural pest control methods.

Next, on May 5th, we're hosting a special Cheese and Wine Tasting event featuring locally sourced products. This is a great chance to sample some of the region's finest cheeses and wines while supporting local producers. You'll have the opportunity to meet the cheesemakers and winemakers, learn about their craft, and discover new flavors. We'll also have live music and delicious appetizers to complement the cheese and wine. And last but not least, don't miss our Summer BBQ on June 20th! We'll have a variety of BBQ favorites, including burgers, hot dogs, and grilled vegetables, as well as refreshing drinks and desserts. There will also be activities for kids, such as face painting, balloon animals, and a bouncy castle. So mark your calendars and get ready for a summer of fun at Barryroe Co-op!

Here are a few simple tips you can incorporate into your daily life to make a positive difference. First, consider reducing your food waste. Food waste is a major environmental problem, contributing to greenhouse gas emissions and wasting valuable resources. You can reduce your food waste by planning your meals carefully, storing food properly, and using leftovers creatively. Try making a weekly meal plan and sticking to it as much as possible. Store fruits and vegetables in the refrigerator to keep them fresh for longer. And use leftovers to create new dishes, such as soups, salads, and casseroles.

Another simple way to live more sustainably is to conserve water. Water is a precious resource, and it's important to use it wisely. You can conserve water by taking shorter showers, fixing leaky faucets, and using a water-efficient dishwasher and washing machine. Try reducing your shower time by a few minutes each day. First up is a delicious Spring Pea and Mint Soup. This soup is light, refreshing, and packed with flavor. To make it, simply sauté some onions and garlic in olive oil, then add fresh peas, vegetable broth, and a handful of mint leaves. Simmer until the peas are tender, then blend until smooth. Season with salt and pepper to taste and serve with a dollop of yogurt or cream. This soup is perfect for a light lunch or a starter for a spring dinner.

Next, we have a mouthwatering Roasted Asparagus with Lemon and Parmesan. This dish is simple to make and bursting with flavor.
